CC-CEDICT identifies 拉面, lā miàn, as pulled noodles.

What the reference establishes#

The dictionary identifies the food term. It does not prove a particular cook’s technique, recipe, speed or strand count. Repeated doubling is a mathematical model, not evidence that a chef produces 16,384 intact, uniform noodles. Different noodle-dish names should not be presented as interchangeable examples of hand-pulled preparation.

Questions to use in practice#

Ask whether the noodles are pulled by hand at the venue and what the dough and broth contain. If watching a demonstration, describe only the steps you actually observe. Keep a dish’s sauce or broth separate from its noodle-making method, and confirm dietary requirements with the kitchen rather than inferring them from the name.
